The links seem to be about epigenetic modifications of genes, which doesn't
change the genes, however:
FWIW, the genes ARE changing. Just not the germ-line genes. It's long been
known that immune system genes recombine and swap pieces, so it wouldn't be
surprising if neurons do the same thing. They're closely related in
development.
The real question is, why doesn't the gp think that monkeys do the same thing.
(I'm not sure about bees, but I wouldn't be surprised.)
Then there's epigenetic modifications, which don't change the genes, but only
change their expression. These can even be heritable...though they eventually
wear off. (Many hereditary epigenetic modifications don't appear to be
adaptive, but many non-hereditary modifications do. Go figure.)
The version of genetics that appears in high-school is vastly oversimplified.
Eventually this may be corrected, but that isn't likely while even evolutionary
theory has an uphill battle to be taught. For that matter, most of this stuff
is new since I was in college. That doesn't make it new, though. It's decades
old, at least.

They have been doing Chicken Egg gene modification,
switching on sleeping genes
(on or off)... Chickensaurus is
real. Those genes have been sleeping for maybe
a million
years... so, why not binary?

Same, its either ON or OFF... so, why not memory to work the
same way, where recall then matches up with normal bio
chemical to "recall"
images, smells, etc. With a finite
storage location, then the question is how
does it store so
much information (a lifetime of memories) if it does not
change, and use a different code each time to reuse the
space, where a KEY
then locks and unlocks the memories.
Those with photographic memory, store a
lot of images.
Maybe we all have that ability, but it's the unlock, that is
