What does bolting them to the wall do to prevent you triggering the jarring
vibration by hitting the side of the safe with your hand?

"Blowing" an old style safe (a real one, not a "gun safe")
used to depend on a similar method. The explosion didn't blow the door off.
Instead it simply jarred the catches loose so the handle could be turned (by
hanging a weight on it). Modern safes (real ones) have a mechanism installed
which specifically prevents this. This is a design problem which is very well
known in the security industry.
P.S. I worked on designing some machinery for making automobile door handles.
The door mechanism had to be designed so that the doors would not be jarred open
by impact shock in a collision. This is basic engineering!
