American pies were made from acidic, non mushable apples, according to my

That's the point about American pies changing, the first use of apples
"across the pond" was making cider, you can make cider from any apple
it took time for them to get the right varieties going...
English pies have changed too, the cooker/desert division is relatively recent,
early pies (back in the 13 and 14 hundreds) didn't use sugar, frequently having
pears added presumably as they are sweeter and mixtures of spices.
